About us

Highland farming, plant-floor discipline

Legumex grew up in El Tejar, Chimaltenango, among volcanoes, where volcanic soil and cold nights produce vegetables with tight heads and firm colour. We work with growers across the region under contract and a planting calendar, so the harvest arrives staggered through the year instead of in one season.

Whatever enters the plant is processed the same day. Every lot keeps its plot number, cut date and processing shift, so a container at destination traces back to the furrow where it started.
